Automatic protection - a basic need for GRAV. Reputation GRAV. We need reliability.
The switch need in panel - the site is closed / site work / edited site.
Protection is enabled: the site works.
Edit mode. Protection is “off” only when you save changes, the site is closed.

Routine operations are needed for each site, I would like to see in the panel. All that does not apply to consumer creativity should be adjusted as simply considering only the life experiences of ordinary people.
If your talking about an "offline" type mode, I think that's a worthwhile feature. Please add your feature request on the Grav issue tracker: https://github.com/getgrav/grav/issues
