Form question: list and action

I have two questions:

1. is there a possibility to have a list of pre-defined items to select in a form? I cannot find it.
2. is there a possibility after submitting the form performing script instead of sending an email? Thank you for your help.

Point 2, you can build a plugin that provides a custom form action.
