Personal-related data stored on server-side by Grav

Hi,

due to GDPR, I would like to know what kind of personal related data is collected and stored by Grav code on server-side, e.g. cookies, IP address or timestamps when a user accessed the web page, browser type, browser version, etc.

In Germany such topics are taken very seriously and we have always to inform users about any data that is collected about them.

IMHO there is no special data collection server-side by Grav CMS, all that you mentioned is normally done by the webserver independent of the CMS, except cookies - but these are not stored on the server, but on the visitor's device, and, yes, they are generated by the CMS.
